Herault(Languedoc - Roussillon)

(from Flavours of France (UK): Languedoc takes its name from the old provencal language of “d’oc”; whereas the former country of Roussilon situated at the eastern end of the Pyrenees and bears the imprint of Catalan cuisine and culture. The Catalan influence is particularly evident all along the coast and is reflected in many of the traditional dishes which we have selected for this show. They are predominantly seafood. These include a masterpiece with squid, and “Bourride de Baudron” authentic fish soup the way they make it in Sete. The starting point is Sete, an important commercial port as well as a fishing and holiday centre. Just south is Beziers, home of a famous sculptor whom we visit at work.
