Auxerre

Once a busy river port, the River Auxerre served as France’s gateway for commerce. This region has remained an active centre and has become a popular starting point for inland holiday trips. We visit the district of Chablis one of France’s most outstanding white wine districts and see the production of Andruillettes or king sized sausage. We visit the town, its streets, local church, clock tower and fountain. Recipes include: Oysters, Sausage making, Veal Head and Rabie de Lievre (liver).
